Cake Ball Craze

The hot new craze in baking is cake balls!  I love them!!!  It allows me to be creative all the time!  I love to think up fun new flavor combinations.  I find it hard, though, to make things that aren’t chocolate!  My latest creations (with the helpful suggestions of friends) are: “salted margarita”-lime cake with triple sec sprinkled with kosher salt and decorator’s sugar, “Blue Hawaiian”-pineapple cake with coconut rum topped with toasted coconut, “peanut butter caramel”-caramel cake with peanut butter pieces and cream cheese frosting, and “chocolate covered strawberry”-strawberry cake with chocolate chips and a dark chocolate coating.  They are fun to decorate and display.  And they are just the right size for a sweet treat after lunch.
