Ask Leah – What to cook in a jiffy

We’ve all been there. You want to make a wholesome, homemade meal for your friends and family but you simply don’t have the time to whip out a three course meal or you are exhausted from work. Instead of pointing your car toward the nearest fast food drive-thru, Leah offers speedy alternatives to a burger and fries.

What’s your go-to entree when you’re pressed for time?

Without fail, Leah opts for a beef tenderloin steak or tenderloin roast. Tenderloin steaks take around 12 minutes to cook up and no fancy seasonings are necessary in order for delicious flavors to shine through. Freshly cracked black pepper and salt are often enough.

A cheaper option would be chicken milanesa – a thin, butterflied cut of chicken breast. This thin cut will sear up in about 6 or 7 minutes. Paired with a little lemon juice, salt and pepper, you can’t miss. Bottled salad dressings that are sitting in your fridge also make easy marinades.

For a speedy side dish, the new Uncle Ben’s Ready Rice packets are fantastic. Leah likes to sautee a vegetable medley of mushrooms, zucchini, and onions, adding a Ready Rice packet mixed with water or chicken brother and allowing the combination to simmer until well mixed.
