What to do with Holiday Leftovers

What to do with all of those holiday leftovers?!?!  Especially when one more turkey sandwich just doesn’t sound good?  And I don’t know about you, but I always crave something “healthy” after pigging out for 2 days.  I decided that I could actually figure out how to turn those leftovers into a salad!  That cranberry sauce (that only a few people take a spoonful of) makes a great base for a salad dressing.  Use that spicy mustard you have on hand for sandwiches, some balsamic vinegar, and 1 Tablespoon of pumpkin pie spice (which only gets used once a year) and you have a low-fat, flavorful vinaigrette.  Top that salad with roast turkey, blue cheese (or feta), chopped nuts left over from your pies or sweet potatoes, a handful of those French fried onions that top your green bean casserole, and fresh fruit of some sort.  Pears or strawberries are a great choice.  Or use some of that left over fruit salad that seemed like a good idea but got passed over for a slice of pumpkin pie!  Whatever you top your salad with, I hope that your holiday was wonderful and that it was shared with people you love.  I hope the left-overs are plentiful and that you are refreshed and looking forward to the holiday season.  I know I am!  I love working on holiday treats! 🙂

 

Cranberry Vinaigrette

1 Cup whole berry cranberry sauce

¼ Cup Spicy Mustard

½ Cup balsamic vinegar

2-3 T water

1 T Pumpkin Pie Spice

Pinch of salt

 

Whisk all of these ingredients together and pour over your mixed salad greens.

Top your salad with French fried onions, blue cheese, roasted turkey, walnuts, and pears
