Prickly Pear Vinaigrette

The holidays in Texas have a little more flair than other states, in my opinion. From bedazzled boots and belt buckles to red chili pepper lights, we like to do it big in the Lone Star State. In the spirit of celebrating Texas style, Leah concocted this fun prickly pear vinaigrette just in time for the holidays. The deep maroon hue of the prickly pear syrup has us thinking of sugar plums, cranberries and all sorts of holiday-themed goodies. I think it would be a great accompaniment to some fresh salad greens or served over freshly grilled chicken breast. Try it for yourself and tell us what you think!

Prickly Pear Vinaigrette

  • 1 cup prickly pear syrup
  • 1/4 cup lemon juice
  • 2 cloves of minced garlic
  • 2/3 cup white wine vinegar
  • 2 T soy sauce
  • 2 T Dijon mustard

Combine the above ingredients in a small mixing bowl and enjoy!

  1. Yumm! I recently moved to Arizona and made prickly pear jam around Halloween. Prickly pears have the most incredible flavor, I imagine this recipe is delicious. Unfortunately, all the pears around here are shriveling up in the snow. Maybe next year.
