Quick Cocktails for the Holidays

Christmas this year is a far cry from the white Christmases Bing Crosby and Danny Kaye sang about. With highs reaching the mid-fifties, it certainly doesn’t feel like Christmas outside. In an effort to embrace these unorthodox temperatures, why not celebrate the holidays in true Texas style – with fruit-infused cocktails? We’ve put together two fun recipes that have added a splash of color to our holiday functions while tipping our hats to sunnier seasons. With only a few simple ingredients, these beverages will be ready in a matter of moments and will have your friends and family asking for seconds.

Blueberry Mojito

Ingredients

  • 8 blueberries
  • 6 to 8 mint leaves
  • 3 ounces club soda
  • 2 ounces Bacardi Limon
  • ½ ounce simple syrup
  • 1 lime wedge or a splash of fresh limejuice
  • Fresh mint for garnish

Muddle the blueberries and mint with a splash of soda in a shaker until they are crushed. Fill a shaker with ice then add the lime, simple syrup and Bacardi. Shake well. Strain into a glass and add the soda. Garnish with mint sprigs as desired. Enjoy!

Raspberry and Lime Margarita

Ingredients

  • 1 pint of fresh raspberries or about 1 cup of frozen
  • ½ cup lemon juice
  • ½ cup limejuice
  • 1 cup of tequila, give or take

Combine the raspberries and citrus juices in a blender. Pulse until well blended. Use a fine mesh strainer to transfer the mixture into a bowl, which will remove the seeds from the berries. Add the tequila and pour the mixture into a pitcher or salt-rimmed glass with ice. Garnish with a lime slice and enjoy!
