Creamy Lime Vinaigrette

This recipe got left off of the blog for the Peach/basil salad.  Oops!  While it is a perfect flavor profile for the salad, this creamy vinaigrette is so easy to make and is great with lots of summer favorites.  For example, it would be delicious served over freshly grilled fish or shrimp. Creamy Lime Vinaigrette

¼ Cup Fresh lime juice and the zest from one lime

2 T light white wine vinegar

2 T smooth Dijon mustard

¼ Cup half and half

Salt and course ground black pepper

Whisk all of the ingredients together.  Be sure to add plenty of salt.
